Food plays an integral role in creating, sustaining, and growing global diasporas. Drawing on perspectives ranging from public health and sociology to history and literary studies, we will examine how studying food can help us expand our understandings of the many dimensions of diaspora, migration, and mobility. With assignments including creating a diasporic menu as well as designing a diasporic cookbook, this course encourages us to actively reflect on how our own food choices connect us to the many diasporic foodways that have fundamentally shaped our food systems.
